Recipe: Microwave Baked Potato with Mince

Time: 15-20 mins.
Ingredients.
1 carrot
2 large potatoes
1 clove of garlic
1/4lb of mince
Coleslaw
Grated cheese
Salad leaves
Salt and pepper
Wash and scrub carrot.
Slice and dice.
Dice half clove of garlic.
Heat oil in a pan.
Add quarter pound of mince.
When it browns add the carrot and garlic.
Heat until mince is cooked through.
Scrub potato.
Slit potato with knife in one or two places.
Put it on a damp kitchen towel on a microwavable plate.
Microwave until softish in the middle. (About 4 mins on an 800w microwave but depends on size of potato).
Leave to stand for 5 minutes to let the steam finish cooking through the middle.
Make a cross in the potato with a knife and then push the ends towards each other.
Scoop coleslaw into the potato.
Add the mince/carrot/garlic mixture.
Top with grated cheese.
Sprinkle with salt and pepper.
Add side salad.
Serve.
*You might want to start cooking the potato in the microwave just before you add the carrots and garlic to the pan but the mince and potato can be cooked simultaneously.
*Vegetarians can leave the mince out and just cook with cheese and coleslaw.

Mmmm… backed potatoes… for vegetarians, vegans or lactose-intolerant folks, here are a couple of easy substitutions for the mince and cheese in the above recipe:
Vegetarians:
Instead of frying mince in the pan, sauté some chopped mushrooms and onions in some butter or white wine for a couple of minutes until the onions are clear and the mushrooms are tender.
Vegan/Lactose-Intolerant:
Instead of cheese, try with some guacamole or salsa.
